Depends. For stark white, I use paint. On the go when I’m doing quick highlights like in eyes, lips, etc. I’ll go with the white gel pen.
Soft highlights, like in hair, I go with a white pencil. <3

Yes, TONS of references. It’s all about practice and drawing every single day. As much as I hate to say it, it all goes down to practice. And learning basic anatomy! Start from there. :D
